Miss Annie Lee Polk was a part of the Fleur de Lis family for over 30 years. She learned to prepare all the special recipes from Mr. Isadore Williams.

     While, Miss Annie worked days for many years, she first started working, making pizzas at night.

     She raised two daughters over those years, while working nights at the Fleur de Lis and many of those years also working jobs during the day to provide for her children.

     Miss Annie would occasionally work a double shift if one of her co-workers was ill and needed off. 

     Many of the Fleur de Lis regulars did not feel their meal and visit at the Fleur de Lis was complete if they didn't get a chance to look into the kitchen and say a word to Miss Annie.

     We are sure the customers still miss seeing her, as we do. She will always remain in our hearts as a very special friend and a part of our Fleur de Lis family.
